2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup sugar
pinch of salt
2 cups buttermilk
2 large eggs - lightly beaten
2 tablespoon unsalted butter - melted
1/3 cup mascarpone - lightly whisked with a fork
1 teaspoon vanilla extract
zest of 1 lemon

In a large bowl, combine the flower, baking powder, baking soda, sugar and salt. To the dry ingredients, add the buttermilk, eggs, butter, mascarpone, vanilla and lemon zest.Stir all the ingredients until they are just combined. Do not over mix.
Heat a skillet (i use cast iron - it makes the best pancakes) and brush it with butter. Once the skillet is ready - pour about 1/3 cup of the batter onto the skillet. Wait until the pancake bottom is golden brown and then flip. Cook until both sides are golden brown.

blueberry syrup

1 jar of blueberry jam
1 tbs water
heat in saucepan until syrup like consistency
serve the pancakes with blueberry syrup and fresh raspberries to sprinkle over top.


halloween treat

These Ghosts on a Stick are the perfect treat to bring to a Halloween Party.  With a delicious pear underneath the coating, everyone will appreciate this semi-healthy treat

Here's what you will need:  Pears, Candiquik, almond bark or any white chocolate, mini chocolate chips and popsicle sticks.

First you'll want to remove the stems from the pears and insert the popsicle sticks


Prepare the Candiquik according to package directions or melt almond bark or white chocolate as you always do.  I like to use Candiquik because it hardens very quickly and is easy for the kids to pour over the pear.  Set each pear on waxpaper to dry.

Before the coating or chocolate completely drys, decorate with mini-chocolate chips for the eyes. 




I found it’s fast, tasty, refreshing and it doubles as a healthy snack or breakfast for those times when I need a quick energy kick but run out of time.
1/4 tsp vanilla essence
1/3 cup blueberries
1/3 cup raspberries
1/2 cup apple juice
few mint leaves
1/4 cup yogurt
3 ice cubes
1 banana

Add a couple of ice cubes. Just a few, going for a slightly frozen concoction, not a liquid ice cream.



Microwave Mug Cake

1-2-3 Chocolate Microwave Mug Cake
soooo tastefull 

3 tablespoons unsweetened cocoa
2-3 tablespoons sugar (according to desired sweetness)
1 tablespoon flour
3 tablespoons milk
3 tablespoons vegetable oil, such as canola
3 tablespoons egg white or plain Egg Whites in a carton
1/4 teaspoon vanilla
1 teaspoon chocolate chips

*As a variation, substitute almond extract for the vanilla.
Also, you can change the chocolate chips to any flavor chips you'd like.

Bake in microwave for about 2 minutes
It puffs up and may overflow, but that is OK

these flower broches are very popular these days and you can buy them almost everywhere BUT they're all the same in shops.I wanted to make my own broche (that you can also put in your hair) unique one.
It's really simple to make it.In some other posts I will let you know how to do it yourself :)
